I'm not sure about opteron, but on my two-cpu Dell (windows 2003) I was having problems with software (palm sync stuff) because of hyperthreading (a different problem, I know). But to turn it off I just selected the executable in Windows, right click, selected Properties. There is a tab there called Compatibility, and on this tab I set it to run in compatibility mode (Windows 2000). I don't know if this will work for your problem, but it worked for mine...
