I also have a project for which I'm using CaCert.
It's a Swing app that helps you encrypt a PDF using
somebody's public key (a .cer file).
Only the person who owns the corresponding private key
can read the doc (Certificate Encryption).
The first version of the app is finished, but I need
to write some documentation as you need to download
the Unlimited Strength Jurisdiction Policy Files 6
(JCE) if you want it to work in all cases.
I don't know when I'll be ready to release it;
the same goes for the next iText version.
