Ah...I thought you were creating the PDF with iText.
If you create the PDF via a printing process (like PDFCreator) - then
you are screwed :(. Printers don't know anything about metadata and
so any such information that could be entered in Word will get
"tossed on the floor" when you print.
If, however, you were to use a proper "direct to PDF" solution such
as Adobe Acrobat - then the metadata you can enter in Word (or your
image editor as you prepare the image) will be properly passed into
the PDF and then can be located and processed by iText (etc.)
